Yes, the season is over, but that doesn't mean it has to completely evaporate (pun intended ;-) from you mind. In fact, here are some of the more interesting facts about Maple Syrup and the large industry as a whole, enjoy!
  • It takes about 42 gallons of sap to make 1 gallon of syrup
  • One maple tree will produce roughly 0.40 gallons of syrup (~17 gallons of sap)
  • Canada is the worlds largest Maple producing country
  • A man was fined $9.8 million and sentenced to 8 years in jail for stealing 3,000 tons of syrup from a reserve (worth $18.7 million)
  • IHOP only has 1 location that serves real maple syrup
  • Sap is only 2% sugar content, syrup is at 66.66% sugar
  • An RO (reverse osmosis) machine will bring sap from 2% up to 15-18% sugar content in one cycle
  • The vacuum pressure in sap lines is held around 33 PSI (about the same as car tire pressure)
  • During the season we'll collect and process about 650,000 gallons of syrup
